The dry tasting herbs come together perfectly as the liquid still retains the bouquet of fragrant greens. If you look at the colour, it’s like looking at a field of freshly picked French herbs at the height of the season.

It’s the strongest I’ve had, not too far off the strongest ever to be banned.

Like a fine wine, this elixir is meant to be enjoyed slowly. Over time, as you approach the end of the bottle, the strength appears to increase.

There are clear flavours of anise and fennel that are well balanced with the aniseed. As we get nearer to the bottom of the bottle, the licorice flavour comes through more clearly.

There is a subtle hint of wormwood, completing a fragrant bouquet that makes you want to enjoy this award-winning drink even more.

After the herbs are gathered from the valley behind the distillery the herbs are then brought to the farmhouse where they are dried over open air fires.

If you see the distillery, you know it’s a farm.

Several herbs are placed in large barrels and water added a little at a time. This step is crucial as the water must not fall from the sky and create muddy conditions.

The obvious difference is that it tastes so good.

It’s very subtle and well-balanced absinthe with a flowery perfume and a nice licorice taste. It’s almost nutty.

I like the smooth way it goes down and it’s easy to sip slowly. It’s a clean tasting absinthe that is absolutely a delicious drink.

I have tried a few and this one is my favorite.
